This is the first post of a new series highlighting foods and products that I’ve found to be helpful when incorporating into a diabetic/keto dietary lifestyle. Most products I’ve found are inexpensive and easily obtained through local grocers and larger city-based chains.
These posts will be as short and to the point as I can keep ‘em.
The ingredients for this autumn cottage snack are simple and inexpensive and can be altered to meet your own taste preferences, just remember to be mindful of any carb-increase when altering.
They include... 1 Tbsp roasted walnut oil (roasted pumpkin seed oil tastes great with this recipe, too) 1 Tbsp sugar-free caramel syrup (or whatever flavor you prefer) 1 to 2 servings of cottage cheese A dash of pie spice You can layer the flavored ingredients over the cottage cheese or stir them together. Chopped or sliced nuts go well with this recipe too, but don’t overdo it or, depending on the type of nuts you use, the carb count can increase significantly. The Torino caramel syrup is usually available at Walmart, as is the roasted walnut oil. Enjoy!
